Tasting notes

Robe: firm
Palate: Very long finish, fruity and spiced notes maintaining a good balance

Description

This wine was crafted in the style of the Passetoutgrain from Burgundy, composed primarily of Gamay and Pinot Noir. The Zweigelt comes from grapes grown by "Mikino Hotori" in the Nobori district of Yoichi. The label does not mention Domaine Takahiko, but only Takahiko Soga, as this wine does not come 100% from the Domaine's own grapes.
For this Passetoutgrain, the aroma of plums and prunes is more pronounced than usual, followed by spiced notes such as cumin and cinnamon, then dark fruits in the background. Overall, the aromatic volume is very rich in this vintage. It also presents a characteristic acidity that sets it apart from previous Nanatsumori wines. The colour is deep and, among the fruity aromas, one finds notes of violet and other flowers and herbs, as well as notes of dead leaves and matsutake mushrooms. The finish is very long and pleasant, accompanied by umami. Notes: Deep wine colour, well balanced with tannins and spices from the alcohol.
Aromas of violet, dead leaves and mushrooms. The fruitiness and three-dimensional forest aroma are structured by a lingering finish of Umami. The grapes of this vintage have an acidity suggesting a long ripening.

Domaine Takahiko

Founded in 2010 in Yoichi (Hokkaido), Domaine Takahiko, run by Takahiko Soga, spans 6.7 hectares of volcanic clay soils mixed with sand and gravel from andesitic rock, in an oceanic climate, and practises organic, biodynamic and regenerative farming for an annual production of 15,000 litres.

Trained in oenology and microbiology, and heir to the Obuse Winery, Soga developed his vocation at Coco Farm Winery before revealing the potential of Hokkaido grapes, then drawing inspiration from the Jura and Burgundy to create an estate dedicated to pinot noir after identifying Yoichi as an ideal terroir. This approach has led to international recognition, notably with the wine "Nana-Tsu-Mori", added in 2020 to the menu at Noma and presented at the G7 summit in Hiroshima in 2023.
