This Shōchū owes its name to the barley variety used, "Toyonohoshi", suited to Shōchū brewing.

In order to make the best use of the original characteristics of the barley, the barley polishing rate is only 10% compared to the usual 35%.
Distillation is carried out at atmospheric pressure and the blending is done at bottling with Japanese spring water to reach an alcohol volume of 25% without filtration.
This Shōchū with notes of nuts is characterised by a rich and intense aroma, burnt cereal, woody notes, wild herbs (génépi), caramelised sugar to the extreme.
The palate is a true caress, rounded, soft, smoky, with indulgent accents of cereals.
