Tasting notes

Perfect pairings

Its refreshing shiso aroma and balanced sweetness pair well with Japanese dishes (washoku), such as chirashi sushi or chicken and cucumber seasoned with plum paste (umeboshi-ae).

The tasting is also remarkable on a vanilla ice cream, on a sliced white peach, or a white melon.

Tasting notes

Robe: Orange-pink
Nose: Frank and floral
Palate: Soft and balanced

Description

The orange-pink colour is magnificent and vibrant. The aroma is intense. You will first discover the scent of shiso, plenty of freshness, tangy accents, a bouquet of aromatic herbs, spices, great complexity, a clean and floral nose, with hints of rose, blackberry, bitter orange, blood orange, and plum.

The palate is well-balanced and pleasantly smooth, with well-balanced sweetness, red shiso, hibiscus, basil, plum, cherry, cherry candy, roundness, slightly saline at the start while preserving freshness.

The addition of a subtle salty touch and ginger brings "depth" and "pleasure" to the whole. This product successfully overcomes the common pitfalls of Shiso Umeshu, namely "too sweet", "too delicate" or "monotonous".
