Perfect pairings

It is excellent mixed with sparkling water or mineral water. It is often enjoyed as an aperitif or long drink. It is excellent served with smoked fish (mackerel, sardine, herring).

Description

Umeshu" is a fruit liqueur representative of Japan, brewed with the greatest care, by steeping plums in shochu (distilled spirit) or sake.

Plum wine (Umeshu), which has a slight acidity, a rich aroma and a relatively low alcohol content, is a very popular and easy-to-drink liqueur. Umeshu is the expression of a timeless tradition that combines the simplicity of ingredients with the art of patience and precision.

The making of Umeshu is a simple process that begins with the delicate ume fruit, the plum of the Japanese apricot tree. These fruits, renowned for their powerful fragrance and rich acidity, cannot be eaten raw. The only way to enjoy them is to preserve them in sugar or salt, or to make liqueurs.

For the umeshu, the ume are carefully steeped, at our artisan Zuiyo, in a rice shochu (distilled spirit). This is complemented by a touch of sugar and ume plum juice to harmonise the flavours.

Zuiyo

Founded in 1867 in Kawashiri, a historic hub of the rice trade under the Hosokawa reign, Zuiyo Co. was the first brewery to transition local production from akazake to sake, playing a major role in its development in Kumamoto, notably through the establishment of the Sake Institute in 1909.

Today led by Kentaro Yoshimura, who is closely involved in production, the house collaborates with local rice farmers to craft award-winning sakes, favouring lightly polished, fertiliser-free rice in order to fully reveal its natural potential. Despite the damage caused by earthquakes, the brewery continued its operations thanks to the support it received, drawing on the consistent groundwater from Aso, and pursues an approach combining the preservation of traditions, innovation, and the promotion of the Kumamoto yeast to create balanced, expressive sakes in harmony with gastronomy.
