Umeshu made from 100% ripe Nanko-ume plums, macerated for 4 months (July to October) with distilled sugarcane alcohol, sugar, and water. After removing the fruit, it is aged in stainless steel tanks open to the air for 3 to 5 years.



Description
The tasting notes of head sommelier Amandine Pastourel are unequivocal:
• The colour is an intense old gold with orange highlights.
• The nose is intense, dominated by aromas of fruit in eau de vie, before evolving towards vanilla aromas and woody notes. The aromas of plum, as well as white peach, are distinctly present.
• The attack on the palate is delicately soft, followed by a powerful mid-palate, marked by the aromas developed during ageing. The notes of ume plum assert themselves on the finish.
• The kishu umekoshu pairs wonderfully with fine cheeses (Saint-Marcellin, Brillat-Savarin, creamy goat's cheese…) or at the end of a meal with chocolate or a fine cigar.
As an aperitif, it can be enjoyed lengthened with well-chilled still spring water or fine-bubbled sparkling water. Recommended serving temperature: 12–14°C
