Description

This umeshu is made from 15 carefully selected Kishu Nanko plums (400 g per 700 ml bottle). This “aragoshi” liqueur (coarsely pressed) is rich in fruit pulp, allowing you to discover with every sip the intense sweetness and fresh acidity of macerated plums. Each sip reveals the fresh aroma of plums and a meltingly smooth, creamy texture. Distinguishing itself from conventional umeshu, it has a higher alcohol content, offering sophisticated, deep sweetness and a bold, satisfying body.
To enhance the plum’s rich character into a complex and delicate flavour, our craftsmen have worked to develop techniques that maximise the potential of this unique fruit variety. They paid particular attention to their sugar recipe to create depth and elegance.
By using an exclusive blend of several sugars, they achieved a multifaceted profile in which sweetness, acidity and aroma unfold in waves, going far beyond a simple sweet taste. This meticulous flavour design makes “Kaséi” a prestigious liqueur that can be enjoyed with a meal, dessert or as a cocktail base. Even when mixed with sparkling water or used in cocktails, its concentrated depth never fades, ensuring a luxurious umeshu experience to the last drop.

The crystal-clear Kuji River, which rises at Mount Yamizo (the highest peak in Ibaraki Prefecture), flows through this region. The area benefits not only from abundant water, but also from significant temperature variations between day and night — ideal conditions for growing high-quality rice, rich in nutrients and flavour.The brewery uses the sacred spring water of the famous Komagata Shrine in its brewing process, renowned for its purity. Filtered through the majestic mountains of Oku-Kuji, this water contains a perfect balance of essential minerals such as magnesium, potassium and phosphorus, providing the ideal foundation for premium sake.
