Among the various varieties of ume, only the Nanko-ume from Wakayama, recognised for their high quality, are selected for this product. The Nanko-ume has very thin skin and a very small stone, which makes it perfectly suited to the production of umeshu.

This drink is best enjoyed as an aperitif or digestif, preferably very chilled or over ice. The more adventurous may try pairing it with subtle dishes during a meal.

Description

The selected Nanko-ume are those that have fully ripened on the tree and were harvested in the morning, boasting a tender, fruity flesh with an incomparable sweetness featuring notes of honey, woody accents, combined with the fragrance of peach or sour fruity apricot, as well as almond kernel notes.

The very distinctive aroma of this umeshu comes from the uniqueness of the barrels used, which previously served for the ageing of whisky, brandy, bourbon and sherry, and have retained their finest fragrances.

Its aim is to showcase these drinks by pairing them with Western cuisine, particularly French.
