This sparkling sake is a true staff favourite. The name "Kokkano Koari" means "the fragrance of national flowers" in Japanese, referring to the use of locally grown rice in Iwate Prefecture.

Description

This sparkling sake catches the eye with its pink colour, derived from the special red sake yeast used. The sparkling quality is the result of a secondary fermentation in the bottle, as its production method is inspired by that of Champagne.

Availability is limited. This is a sake with fine natural bubbles, elegant and refined, presenting a fruity and floral, tangy impression, evoking acerola cherry and its gustatory complexity, with notes of citrus, cherry, raspberry, and wild berries.
