This saké was born from an unexpected accident. In autumn 2007, our brewer was mistakenly delivered CEL24 yeast to brew his nigori saké. This mistake was discovered mid-fermentation.

Description
Indeed, the aroma was very different from that characteristic of unfiltered nigori-style sakes.
Initially sold as a downgraded sake, it was met with great success on the market. The product name was retained and christened Ito-okashi or "Itowokashi", a name with several meanings, including delicious, excellent and interesting.
The CEL24 yeast captivates with its pronounced apple aroma and its refreshing citrus-like acidity, but its low alcoholic fermentation and low alcohol tolerance require rigorous management of the fermentation process.
However, with appropriate management, it can produce a sake that transcends traditional sake concepts, something no other yeast could achieve.
This Ito-okashi sake is a powerful and smooth sake, even among the most common dry Tosa sakes (from Kochi).
This sake offers a fruity, floral aroma with powerful notes of apple from the yeast used. It is a sake similar to a white wine.
It is lively and juicy on the palate, refreshing and smooth, with a refreshing and elegant malic acidity. The finish is long, with notes of cream and barley sugar.
