Description

You will love the notes of mushroom, pine sap, with small peppery, spicy touches and a slight astringency on the finish.

This sake is brewed from Aiyama variety rice, created in 1941 at the sake rice testing site of the Hyogo Prefectural Agricultural Experiment Station.
Its main production area is Hyogo Prefecture, where it originates.
As it is a difficult variety to cultivate, it is a rare variety that is not often grown elsewhere. This rice commands a high price among sake rice varieties and is also known as the "diamond of sake rice".

With a high rate of white core expression and good water absorption, Aiyama dissolves easily in the mash. This characteristic, combined with the flavour and softness of the rice, produces a sake with a rich and mellow flavour.
