Description

The Iwai rice used for this saké is particularly well suited to crafting Junmai Ginjo category sakés. It has easy milling characteristics and a low protein content.

Its large, high-yield grains give the saké a high aroma and a mild flavour.

Its white core (shinpaku) allows koji bacteria to penetrate easily, which facilitates the production of malted rice. The solid kernel of this rice is well suited to brewing light and dry sakés. Located in Rakuchu, our artisan, Sasaki Shuzo, has inherited traditional saké brewing techniques from the past and has become famous for its "Jurakudai" and "Kyo Seiki", which are associated with Kyoto. Sasaki Shuzo has become a tourist attraction in Kyoto, drawing 15,000 visitors per year, partly because it welcomes saké brewery tours. The company's saké brewing process is grounded in fundamental principles. In addition to the traditional experience and intuition of its craftsmen, detailed records and analyses are used to ensure the consistent production of high-quality saké.

Sasaki Shuzo

Founded in 1893, Sasaki Shuzo brews its sake at "Rakuchu", in the heart of the historic city centre of Kyoto. Of the roughly 300 original breweries, it is the only one to have survived in this district.

The exceptional topography of Kyoto and the abundance of water were the main reasons why sake was brewed in Kyoto, and why Kyoto was designated as the capital for
1,000 years.
