Description

Distilled alcohol is generally added to make sake dry, but this product is made solely with rice. Through a four-step brewing process and careful temperature control, our artisan has crafted a surprisingly dry sake.
This sake is made with high-quality rice with a 55% polishing rate and brewed by low-temperature fermentation.
Since no distilled alcohol is added, you can sense the rich, fruity aroma of the rice even though it is a very dry sake.
Its aromas do not interfere with the flavour of the food.
The taste is lively and the umami and acidity are well balanced.
It is very dry but not too sharp on the tongue".

Nakamoto Shuzo

Founded in 1727 at the foot of Mount Ikoma, between Nara and Osaka, Nakamoto Sake Brewery produces artisanal sakés designed to accompany meals in the manner of a wine. True to this philosophy, it crafts its sakés exclusively from rice, water, koji and yeast, with no added distilled alcohol or antioxidants.

Combining tradition and innovation, the brewery pays particular attention to the quality of its raw materials and employs modern technologies, including a water activator that promotes the activity of koji and yeasts. This approach helps to develop richer aromas and to enhance the flavour quality of its sakés.
