This saké is perfect enjoyed alongside roast pork, melon, yellow peach, pear with cheese and cured ham, chicken fricassee, country pâté, oysters (raw, smoked, au gratin), cheeses (washed-rind, parmigiano, reggiano), tempura, grilled fish, or even an excellent Sukiyaki fondue

Description

The "Biroka", a light filtration method that does not involve filtering through activated charcoal — which is typically used to remove colour and turbidity — gives the liquid a yellowish hue and the magnificent aroma characteristic of Junmai Daiginjo saké. It resembles an elegant white wine at low temperature and acquires the structure of a medium-bodied white wine or an orange wine as the temperature rises.
The aromas evoke melon, quince, candyfloss, and sea breeze.
On the palate, a gentle acidity and sweetness are at the heart of the experience, with a toasted note and a hint of bitterness to balance the whole.
The finish is medium. Umami and sweetness gradually appear and linger.
