Entirely handmade, fermented in clay jars (a tradition dating back to the end of the Edo period) and obtained by vacuum distillation, this shochu is aged for a minimum of 10 years in oak barrels.

Perfect pairings

This shochu can be enjoyed neat, at the end of a meal, on the rocks or at room temperature, or diluted with 1/3 very cold water alongside grilled beef, hard cheese (Comté, Parmesan, Mimolette) or even a good chocolate dessert.

Description

 This vintage shochu, distilled in a particular atmosphere reminiscent of whisky, reflects the brewery's passion and the unwavering dedication of its craftsmen.

The aromatic notes evoke nuts and caramel.
It stands out for its traditional flavour — gentle on the palate at first, then robust. The palate is smooth and indulgent. You can detect subtle oaky, woody notes along with hints of vanilla and caramel.
