Nose: straightforward, evokes forest scents, with a variety of aromas
Palate: very long and pleasant finish with an umami flavour

Description

The 2022 vintage has a spicy aroma resulting from the whole clusters, typical of Nana-Tsu-Mori, and unlike previous vintages, it develops not only aromas of strawberry and dark fruits but also red fruits such as raspberry.

Ideally, it should be left to age for at least four years before opening. A world of emotions awaits. This unfiltered wine, with its orange-red robe, offers a frank, open, floral nose with hints of blackcurrant buds and redcurrant. It can be compared to a fine Burgundy.

Domaine Takahiko

Founded in 2010 in Yoichi (Hokkaido), Domaine Takahiko, run by Takahiko Soga, spans 6.7 hectares of volcanic clay soils mixed with sand and gravel from andesitic rock, in an oceanic climate, and practises organic, biodynamic and regenerative farming for an annual production of 15,000 litres.

Trained in oenology and microbiology, and heir to the Obuse Winery, Soga developed his vocation at Coco Farm Winery before revealing the potential of Hokkaido grapes, then drawing inspiration from the Jura and Burgundy to create an estate dedicated to pinot noir after identifying Yoichi as an ideal terroir. This approach has led to international recognition, notably with the wine "Nana-Tsu-Mori", added in 2020 to the menu at Noma and presented at the G7 summit in Hiroshima in 2023.
