Description

Many people will probably enjoy the 2021 vintage; however, the 2022 vintage is the one that best represents the unique style of Domaine Takahiko Soga. The Nana-Tsu-Mori Pinot Noir is the flagship wine of Domaine Takahiko, produced from the estate's vineyard comprising 13 Pinot Noir clones.

Fermented in large neutral inert resin tanks and aged in French oak barrels (15% new) with 100% whole clusters, it is bottled without fining or filtration. A very small quantity of SO2 is added only when necessary: 10mg/L in 2020, 0 added in 2021.

The wine undergoes a long fermentation of 55 days, with whole-cluster fermentation. No sulphur dioxide is used in order to provide the best conditions for the (wild) micro-organisms involved in the fermentation process.

Old oak barrels are mainly used for ageing, with only 15% new barrels.

Domaine Takahiko

Founded in 2010 in Yoichi (Hokkaido), Domaine Takahiko, run by Takahiko Soga, spans 6.7 hectares of volcanic clay soils mixed with sand and gravel from andesitic rock, in an oceanic climate, and practises organic, biodynamic and regenerative farming for an annual production of 15,000 litres.

Trained in oenology and microbiology, and heir to the Obuse Winery, Soga developed his vocation at Coco Farm Winery before revealing the potential of Hokkaido grapes, then drawing inspiration from the Jura and Burgundy to create an estate dedicated to pinot noir after identifying Yoichi as an ideal terroir. This approach has led to international recognition, notably with the wine "Nana-Tsu-Mori", added in 2020 to the menu at Noma and presented at the G7 summit in Hiroshima in 2023.
