The Domaine Takahiko Nana-Tsu-Mori White de Noir is made from individually selected botrytised grapes from the estate's Pinot Noir vineyard, which are pressed on the last day of the harvest, then fermented in a neutral plastic tank and aged in a 228-litre barrel for one year.
The production of this wine depends on the proportion of botrytis in the vineyard each year. During the harvest period, it undergoes a cold maceration of approximately 14 days, then is pressed on the last day of the harvest and immediately fermented with wild yeasts, without the addition of sulphur dioxide.
After fermentation, the wine is aged in old oak barrels for approximately one year, without the addition of sulphur dioxide. In 2021, weather conditions were favourable and there was virtually no development of noble rot until the eve of the harvest. However, just before the harvest, noble rot developed on many grapes, resulting in a vintage with a high production of White de Noir, as in the previous year.
To avoid producing sweet or high-alcohol wines, they were diluted with the juice of healthy berries before fermentation, but from 2020 onwards, fermentation is carried out exclusively with infected grapes, to produce a dry and full-bodied wine. 2021 was a great vintage for the White de Noir, just like 2020, and the wines are excellent.
