Domaine Takahiko, located in Yoichi (Hokkaido), produces wines deeply inspired by Japanese gastronomic culture and the notion of umami. Its founder, Takahiko Soga, favours aromatic references such as dashi, mushrooms, undergrowth, miso, shoyu and saké over traditional fruity and floral registers. This identity stems both from the cool, wooded terroir of Yoichi and from a winemaking approach aimed at fully expressing the natural micro-organisms.
The domaine follows a low-interventionist approach: long whole-cluster fermentations, use of indigenous yeasts, no addition of sulphites during fermentation, and ageing predominantly in old oak barrels. The 2022 vintage, benefiting from favourable climatic conditions and optimal grape ripeness, is considered by the winemaker to be one of the most faithful expressions of his style.
The Nana-Tsu-Mori White de Noir is crafted from Pinot Noir affected by noble rot (botrytis), hand-selected. Vinified without added sulphites, fermented with wild yeasts and then aged for approximately one year in old barrels, it is produced in limited quantities depending on the extent of the botrytis each year.
The 2020 vintage, considered exceptional, presents a complex aromatic profile blending honey, citrus, truffle, walnut, butter, black tea, mint, white peach, roasted chestnut and orange marmalade. Despite its richness and high alcohol content (15%), it retains a beautiful acidity, great minerality and a long finish, with no marked sensation of alcohol.
