Description

On the tasting side, this umeshu aged for 12 long years reveals a drink with a deep honeyed and amber colour. Aromas of ripe apricot, leather, and very ripe plums dominate, followed by a complex aromatic array evoking tobacco, cocoa, vanilla, and honey.

On the palate, we are faced with a true sipping Umeshu, revealing a full and round mouthfeel, a slight astringency, and notes of maple, bitter orange, chestnut honey, candied date, and Corinthian raisin…

We appreciate this wonderful acidity that makes the mouth water, and a fabulous balance between sweetness, bitterness, and acidity.

Manzairaku

Founded in 1716 in the city of Hakusan (Ishikawa Prefecture), Manzairaku Sake Kura is a historic brewery whose name means "always happy". Located in a region renowned for the quality of its water and sake, it cultivates a philosophy rooted in sharing, conviviality and the pleasure of tasting.


Since 1990, it has been producing Kaga Ume-shu, a plum liqueur crafted using a traditional method from green plums, sugar, alcohol and brewing water. Produced entirely in the Hokuriku region, this liqueur stands out for its balance between aromatic richness and freshness.


Its quality rests on the exclusive use of the rare Benisashi plum, grown in the Ishikawa and Fukui prefectures. Richer in amino acids than common varieties, it delivers a soft texture, a pronounced umami and a great depth of flavour. This exceptional liqueur has notably been served in first class on All Nippon Airways flights to Europe and North America.
