Manzairaku Kaga Umeshu is a premium umeshu crafted in Ishikawa Prefecture from Japanese plums macerated in a quality base spirit. It offers an intense aromatic profile of stone fruits, a well-controlled sweetness and a balanced acidity, with a long and elegant finish.






Description
The Benisashi Ume variety is used for the Kaga Umeshu. This particular variety grows only in the city of Kanazawa (Ishikawa Prefecture) and in the neighbouring prefecture of Fukui. "Beni" means "red" and "sashi" means "brilliance". The name therefore represents the deep, brilliant red colour of ripe Ume. Benisashi Ume contain more amino acids than other Ume varieties. Due to the higher proportion of amino acids, the Benisashi Ume has a softer aroma and an intense, mellow umami flavour. This variety is also used to make high-quality umeboshi plums. It is difficult to cultivate and its yield is lower than other ume, as the branches bear fruit only once every three years. The Benisashi variety is therefore very rare.
