Description

This is an exceptional umeshu, aged for at least three years with no additives. These three years represent the time needed to achieve a beautiful colour and a perfect balance between alcohol, sugar and plum extract, delivering an exquisite flavour. Only the largest plums are used in its production — particularly fragrant, just ripe, and not green. The fragrance and sweet-tangy flavour of the ume will fill you with wonder.

This umeshu, with its gentle peach notes, offers a fine balance between acidity and sweetness. The city of Joyo, where our artisan is based, has long been renowned for its plum trees and is home to the Aoya plum plantation, the largest in Kyoto Prefecture. The indigenous variety grown there, the Joshuhaku, is a high-quality variety with thick, generous flesh and a fully ripe peach fragrance.
