Description
The nose is open, expressive, very fresh, with powerful fruity notes evoking muscat grape, lychee, strawberries and raspberries or redcurrants. The palate is opulent, with accents of strawberry and red fruits, lactic notes or damp wood. This exceptional saké, very pleasant to drink, takes advantage of the sweet flavour of sake rice enhanced by the refreshing sweetness of mochihikari glutinous rice.

Filtration: Fune-shibori. The sake is pressed using the traditional method, often called Fune-shibori. A fune press is a box fitted with a lid that can be pushed down with great force to press the contents of the box. Bags filled with moromi are stacked in the fune press to ensure that the pressure applied to the lid presses all the bags with roughly equal force. The fune press is fitted with a tap at the bottom of the box to drain the sake. The Fune press extracts the wonderful flavours and aromas of the sake as gently as possible.
