Pressing: Fune-shibori. The sake is pressed using the traditional method, often called Fune-shibori. A fune press is a box fitted with a lid that can be pushed down with great force to press the contents of the box. Bags filled with moromi are stacked in the fune press to ensure that the pressure applied to the lid presses all the bags with roughly equal force. The fune press is fitted with a tap at the bottom of the box to drain the sake. The Fune press extracts the wonderful flavours and aromas of sake as gently as possible.
