This gin has two major characteristics. It is the only gin in the world to be crafted using a wooden still in use since the 19th century. This distillation method is characterised by the wood's strong heat retention.



Description
Gin 424 is an exceptional Japanese artisan gin, crafted from four sweet potato shochus (imojochu) derived from koji (malted rice), a uniqueness found nowhere else in the world. Each shochu brings its own aromatic signature: floral and apple notes, buttery and mushroom nuances, hints of yoghurt and wild berries, as well as touches of caramel and vanilla from ageing in sherry casks. This combination gives Gin 424 a remarkable depth and smoothness, rare in the world of spirits.
Distillation is carried out in a traditional cedar wood still, crafted from trees over 80 years old. Assembled without nails, using bamboo bands, this still is distinguished by its high heat retention. The tin tubing encourages the elimination of sulphurous compounds whilst preserving the sweet and savoury components, giving rise to a particularly smooth, round and silky spirit.
Crafted from sweet potato shochu and juniper berries of exceptional aromatic quality, Gin 424 retains all the structure of a gin whilst expressing the richness and smoothness characteristic of imojochu. On tasting, it reveals a subtle cedar fragrance, a beautiful sweetness, notes of umami and a velvety texture that linger on the palate.
