This gin has two major characteristics. It is the only gin in the world made using a wooden still that has been in use since the 19th century. This distillation method is characterised by the wood's strong heat retention.



Description
Gin 424 is a unique Japanese artisan gin, crafted from four sweet potato shochus derived from koji (malted rice), each contributing distinct aromas: floral and fruity notes, buttery and woody, milky and fruity, or even vanilla and caramel thanks to ageing in sherry casks. This composition gives it a deep sweetness and great aromatic complexity.
Distilled in a traditional cedar wood still made from trees over 80 years old, assembled without nails and bound with bamboo ties, it benefits from a particularly smooth, round and mellow texture. The distillation process eliminates sulphurous compounds whilst preserving sweet and savoury notes.
Alongside juniper berries, Gin 424 incorporates four classic gin botanicals: coriander, angelica root, orris root and cardamom. It thus retains the structure of a traditional gin whilst expressing the richness of imojochu (sweet potato shochu).
The result is a gin with floral, fresh and spiced notes, with a subtle hint of cedar, a beautiful sweetness, umami and a delicately alcoholic finish.
