Dom Gris is the flagship cuvée of Domaine Mont, produced exclusively from Pinot Gris grown in the estate's vineyard at Naranokidai, Yoichi. Surrounded by oak forests and chestnut trees, the vines grow in a natural environment that winemaker Mr. Yamanaka seeks to faithfully express in his wine.
The winemaking follows a very low-interventionist approach: after harvest, whole bunches macerate for approximately two months in tank, where fermentation starts naturally thanks to wild yeasts. The wine is then aged for twelve months in Taransaud oak barrels. All operations are carried out by gravity, without pumps, and the wine is neither filtered, nor fined, nor sulphited.
This artisanal approach aims to preserve the purest expression of the terroir and to convey the spirit of the surrounding nature. In 2023, despite a particularly hot climate in Yoichi and significant bird damage in the region's vineyards, Domaine Mont continued its pursuit of authenticity through a wine that fully reflects its environment, its biodiversity, and the philosophy of its winemaker.
