For this 2021 Chardonnay, the aromas are clean and straightforward, with fresh citrus fruit (lemon peel and zest) and green apple and yellow pear, with a light toasted note, not forgetting the vanilla aromas from the barrels with fresh notes.



Description
The attack is gentle, then a slight bitterness and a lively acidity come into balance from the mid-palate. The pleasant acidity and subtle bitterness linger and bring the whole together. We love the delicate hint of minerality.
The texture is oily, with plenty of tropical fruit and lightly creamy flavours. The finish is bright, with a lovely hint of lime cordial and a balanced acidity.
The wine harmonises roundness and pairs well with creamy or butter-based dishes.
Crafted in the cool highland climate of Takayama village in Nagano, this 2021 chardonnay reflects the elegance of the Japanese alpine terroir. Grown at altitude, the grapes benefit from a long ripening season, with warm days and cool nights that preserve a vibrant acidity whilst allowing the rich, expressive fruit to develop.
