Preparation steps:

  1. Carefully wrap the salmon in sterile gauze compresses for easy and hygienic handling.

  2. Spread a layer of special marinade miso approximately 1 cm thick on the bottom of the serving dish using a brush.

  3. Gently place the wrapped salmon on the layer of miso, then cover it completely with the remaining special marinade miso. Do not forget the sides for an even distribution.

  4. Smooth the surface with a spatula to ensure an even coating.

  5. Cover everything with cling film in direct contact and place in the refrigerator for at least 72 hours.

  6. Once the marinating time is up, drain the dish of the exudate (the liquid released by the salmon).

  7. Gently remove the gauze, taking care to scrape off the reusable special marinade miso. This can be stored in the refrigerator, covered with cling film in direct contact, for reuse within 15 days.

Tasting options

Slice the marinated salmon into thin slices or small portions. Serve with a drizzle of Yuzu miso for a fresh and tangy touch. This serving style is perfect for a refined starter or an aperitif buffet.
