Discovering the Azuki bean, the Japanese "red" bean
The Azuki bean in the spotlight. On Monday 10 February 2020, Nishikidôri took part in the Azuki in Paris event and shares it with you.
A wonderful moment of discovery and exchange around this gem that is the Japanese Azuki bean, in the presence of Mr Tetsuya Morita, director of A-Net Farm in Hokkaido; our Azuki bean supplier,
- from chef Kenichi Iwasaki, who specialised in the making of traditional Japanese pastries in Tokyo for many years and now shares his expertise in France for our great delight.
- from Chef Pascal Chabot, a chef who worked in prestigious establishments such as the Ritz and La Tour d'Argent for over 30 years, he shared his Azuki bean-based recipes with simplicity and a pedagogical approach
- and the cooks from Meet My Mama, a gourmet and solidarity-driven female start-up.
