Special soy sauce Kuyou Murasaki

Miso Kinzanji is a traditional food, barley, rice, sugar, salt and some vegetables such as eggplant, gourd, ginger and Japanese shiso grass (Perilla).

"Tamaru" means collecting or forming a puddle, so that the liquid coming out of the Miso Kinzanji is called "Tamari".
It is a thick liquid with excellent flavor of plant extract.
The Japanese started using the Tamari liquid, then tried to recreate soy sauce more efficiently without vegetables.

Our craftsman is the only soy sauce manufacturer to continue making soy sauce from Tamari Kinzanji representing 3% of the weight of Miso Kinzanji.
It is a rare product, low salt, dark color, thick texture and deep flavor.

This soy sauce called Kuyou Murasaki received the Big gold medal in the world selection for 10 consecutive years from 2006.

Generally, the black soy sauce contains 17 to 18% salt. This sauce contains only 13% because it is made from the accumulated liquid of Miso Kinzanji.

It concentrates the umami of ingredients, vegetables, miso kinzanji.

Our perfect agreements : This special soy sauce can be used for sashimi, ohitashhi (boiled vegetables), tsukemono (pickles), etc.
It can also be used for simmered fish, steak and grilled meat to bring out the best of the ingredients.
