FAQ Sweet Soy Sauce

Origins of sweet soy sauces in Japan

In Japan, sweet soy sauces as they are known in Europe do not exist. Their authentic version originated on the island of Kyushu, particularly in the Prefectures of Fukuoka and Kumamoto, where the addition of sugar became integrated into local cuisine. This influence dates back to the Edo period, when Japan opened its doors to international trade, notably with the Netherlands. The arrival of sugar, imported from the West, was quickly adopted on the island of Kyushu, a region where the cultivation of sugar cane developed. This new ingredient naturally established itself in local gastronomy, giving rise to sauces with a delicately sweet flavour, appreciated for their harmony between sweetness and umami.
