Founded in 1877 in Kanazawa, Kagadane specialises in the production of monaka and offers more than 200 models inspired by the seasons and events, as well as ready-to-use moulds for various purposes.
The company perpetuates the art of Japanese confectionery with rigorous and meticulous quality control. Monaka, a traditional confection made of mochi-based wafers filled with anko, has a history dating back to the Edo period and is distinguished by its unique texture, while the origin of its name is said to be linked to a poetic image of the moon or to the idea of "centre", in reference to its filling.
