Why choose a sweet potato paste recipe?

Sweet potatoes are an excellent source of dietary fibre. When you cut them, a milky white liquid called "Yarapin" (latex) flows from their surface. Exclusive to sweet potatoes, this latex protects the stomach lining and promotes gentle bowel movement. Yarapin is particularly abundant in the skin of sweet potatoes. However, due to its darkening or change in texture, many businesses and families prefer to remove it. Unlike humans, wild animals, aware of its benefits, consume this nutrient-rich skin. We have grown accustomed to discarding this precious part, thus wasting a high-quality resource for purely aesthetic reasons. Yet this rejection is not only a nutritional loss, but also a waste of time and money. At our artisan Kairen, located in the south of the island of Kyushu, we make the most of the sweet potato in its entirety, using both its flesh and its skin to craft our paste.

In addition to being robust, sweet potatoes are an exceptional source of nutrients. They are packed with carbohydrates, starch, minerals, vitamins and dietary fibre, making them an ingredient of choice for a healthy and balanced diet. Sweet potatoes are rich in plant-based fibre, promoting good bowel transit and helping to relieve constipation. It is widely accepted that fruits and vegetables concentrate a large proportion of their nutrients between their skin and their flesh. Sweet potatoes are no exception and contain many beneficial elements in their skin. The skin also contains enzymes that facilitate digestion by breaking down starch and help prevent bloating.

Try this sweet potato cream today and treat yourself to a healthy and indulgent dessert!
