Ingredients for the royal icing for decorating the shortbread biscuit:
- 55 g of egg whites
- 200 g of icing sugar
- 1 teaspoon of Yuzu juice ref NISIF5
Preparation of the homemade shortbread biscuits:
1- Mix the flour, caster sugar and yuzu zest or matcha tea depending on the chosen biscuits.
2- Add the butter and rub the dough with your fingertips until it resembles breadcrumbs.
3- Make a well and add the egg yolks, continue kneading while adding a little water to form a ball of dough.
4- Leave the dough to rest for 1 hour in the refrigerator, wrapped in cling film.
5- Roll out the dough between two sheets of baking paper to approximately 2 mm thickness and cut out the biscuits using cookie cutters of your choice.
6- Bake for 10/12 minutes at 180°C (Gas Mark 6).
7- Meanwhile, whisk the egg white with the icing sugar and yuzu juice using a mixer to prepare the royal icing.
8- Once out of the oven, leave the biscuits to cool, then decorate them with the royal icing.
These biscuits can be stored for 2 to 3 days in a metal tin.
