Salmon in a herb and corn crust

Ingredients

for 2 people

  • Salmon: 2 fillets (approx. 250–300 g)
  • Wholegrain mustard: 1 tablespoon
  • Herbes de Provence: 1 teaspoon (If you don't have any, Italian herbs will do)
  • WA-PANKO corn mix (ref. NISURS3): 40 g
  • Salt and pepper: to taste
  • Olive oil: 1 tablespoon

A typical dish from southern France, made with salmon coated in a light herb and corn crust, with a tangy touch of mustard.

Preparation:

1. Lightly season the salmon with salt and pepper, then leave to rest for 5 to 10 minutes.

2. Spread a thin layer of wholegrain mustard over the surface.

3. Mix the herbs and WA-PANKO, then gently press the mixture onto one side of the salmon.

4. Bake in the oven at 180 °C for 10 to 12 minutes. The interior will be soft and the exterior crisp.

To fully enjoy its authentic flavour, serve it with a lemon butter sauce.

A delicate contrast between the crisp corn crust and tender salmon, enhanced with aromatic herbs and balanced by the gentle acidity of mustard.
