This sake expresses a procession of fruits and flowers: cherry, strawberry, pear, apple, mango, melon, pineapple, banana, white flowers, honey. Fruity and silky, this sake is round on the palate, with a persistent and fresh flavour, as well as a beautiful freshness.






Description
Rich in bold flavours, it leaves a clean and balanced finish on the palate. The name KID comes from the image of the "climate of Kishu" (the former name of Wakayama Prefecture) and also represents the innocence and freedom identical to that of a child.
The KID range created by Heiwa Shuzou aims to introduce the charm of sake to new generations who rarely drink it because they are unfamiliar with it. The KID junmaishu DAIGINJYO sake has a moderate alcohol level of 15%. Its pasteurisation is described as manual.
It is carried out using the "binkan hiire" method: the sake is bottled but the bottles are not completely sealed. They are first heated to +65°C. This gentle pasteurisation preserves the taste and aromas of the brew as well as a pleasant freshness. The rice used is of the yamadanishiki variety (50% polishing).
