You will enjoy this umeshu with slow-cooked dishes such as a seven-hour lamb, monkfish à l'armoricaine, lamb tagine or even an Irish Stew! On the cheese side, dare to pair it with an aged gouda, a mature Comté, a roquefort, or a vintage parmesan.

Description

The Benisashi Ume variety, used in the production of Kaga Umeshu, is a particularly rare and sought-after variety of ume. Although often referred to as the "Japanese plum", ume is in fact, from a botanical standpoint, closer to the apricot.
Grown exclusively in the Kanazawa region (Ishikawa Prefecture) and in the neighbouring prefecture of Fukui, the Benisashi Ume takes its name from its intense, brilliant red colour: "beni" means red and "sashi" means lustre or brilliance. Naturally richer in amino acids than other ume varieties, it develops softer aromas, a particularly mellow texture and a deep umami richness.
Also used in the production of premium umeboshi, this variety is known to be difficult to cultivate. Its production is limited, notably because the branches bear fruit only once every three years. This rarity, combined with its exceptional flavour qualities, makes the Benisashi Ume one of the most prestigious varieties in Japan.

 

On the tasting side, for this umeshu aged for 5 long years, we discover a drink with a honeyed, amber colour. The aromas are very complex and intense, a bouquet centred around notes of fresh walnuts, candied apricot, dried fruits, an oxidative quality, delicate notes of very ripe mirabelle plums, and subtle peaty accents.

On the palate, you will appreciate a subtle, very pleasant acidity, sweet flavours of caramelised fruit. The candied apricot is confirmed, with light woody notes, delicate and very elegant bitterness, and a pleasant acidity full of freshness. In short, a well-balanced structure.

Manzairaku

Founded in 1716 in the city of Hakusan (Ishikawa Prefecture), Manzairaku Sake Kura is a historic brewery whose name means "always happy". Located in a region renowned for the quality of its water and sake, it cultivates a philosophy rooted in sharing, conviviality and the pleasure of tasting.


Since 1990, it has been producing Kaga Ume-shu, a plum liqueur crafted using a traditional method from green plums, sugar, alcohol and brewing water. Produced entirely in the Hokuriku region, this liqueur stands out for its balance between aromatic richness and freshness.


Its quality rests on the exclusive use of the rare Benisashi plum, grown in the Ishikawa and Fukui prefectures. Richer in amino acids than common varieties, it delivers a soft texture, a pronounced umami and a great depth of flavour. This exceptional liqueur has notably been served in first class on All Nippon Airways flights to Europe and North America.
