Dengaku de légumes et agneau

Vegetable and lamb dengaku

Ingredients

for 4 people

  • 8 French-trimmed lamb cutlets,
  • 1 courgette,
  • 1 small red kuri squash (or parsnip depending on the season),
  • 1 tablespoon of golden sesame oil, ref. NISYS31
  • 1 tablespoon of white or black sesame seeds, ref. NISKU10-B or NISKU11-B
  • A few chives.

For the sauce:

  • 2 tablespoons of country miso, ref. NISMK3
  • 4 tablespoons of white sesame paste, ref. NISYS34
  • 4 tablespoons of sake,
  • 2 tablespoons of cane sugar,
  • 1 tablespoon of kombu in powder form, ref. NISTSTPK-S

Preparation of the dengaku

The sauce

1. In a small saucepan, mix all the sauce ingredients together.

2. Cook over a low heat for about 10 minutes, stirring, then set aside.

The vegetables

1. Cut the courgette into pieces 5 to 6 cm long and into 5 mm thick slices, then cut the pumpkin into 3 to 5 mm thick slices.

2. In a frying pan, pour 1 tablespoon of sesame oil and add the courgettes and pumpkin, then cook over a medium heat for 3 to 5 minutes on each side.

The meat

1. Quickly grill or pan-fry the lamb chops.

2. Plate up, garnish with the Miso sauce, and sprinkle with white or black sesame seeds and chives.
