Nouilles udon et veau sauté au poivre rouge

Udon Noodles and Stir-Fried Veal with Red Pepper

Main Courses 60min Easy

Udon are the thick noodles, made from soft wheat dough, water and salt, and are the most widely consumed in Japan. They can be enjoyed hot or cold.

Ingredients for 4 people

  • 320 g of Udon (ref. NISMNK011)
  • 1 red pepper
  • 1 tbsp of sesame oil
  • 1 red onion
  • 200 g of thinly sliced veal
  • 1 courgette

For the veal marinade:

  • 10 g of chopped ginger
  • 4 tbsp of BBQ sauce or 2 tbsp of soy sauce
  • 2 tbsp of mirin
  • 1 tbsp of miso
  • 2 tbsp of red pepper
  • 2 tbsp of sunflower seeds
  • chives
  • 1 tbsp of sesame oil for frying

Preparation of the udon with vegetables:

1. Veal marinade: in a bowl, place the thinly sliced veal, mix with the BBQ sauce (or the marinade ingredients) and leave in the refrigerator for 30 minutes.

2. Thinly slice the vegetables into strips.

3. In a frying pan, heat the sesame oil and stir-fry the veal and vegetables.

4. Bring at least 2 litres of water to the boil in a saucepan and cook the Udons for 4 minutes. Drain and drizzle with sesame oil, stirring to coat.

5. On a plate, arrange the noodles with the veal and vegetables.

6. Sprinkle with the red pepper, sunflower seeds, and sliced chives.
