      This Shōchū owes its name to the barley variety used, "toyonohoshi", adapted to shōchū brewing.

      In order to best use the original barley features, the barley polishing rate is only 10% against the usual 35%.
      The distillation is by atmospheric pressure and the cutting is bottled with Japanese source water to reach a volume of alcohol of 25% without filtration.

      This shōchū with notes of nuts is characterized by a rich and intense aroma, Burned cereal, woody notes, wild grass (genepi), caramelized sugar at the extreme.
      The mouth is a real caress, all in roundness, sweet, smoke, on gourmet accents of cereals.
