This delicacy appeared in Japan sometime between the 10th and 11th centuries. Matured on itself, yubeshi develops a powerful aroma of yuzu and candied and caramelized tastes.

Farmers, in order to preserve their precious yuzu all year long, removed the pulp, and then mixed it with a mix of miso, herbs and spices. This blend was then put back inside the peel of the yuzu and left fermenting for a long time. This little wonder has been preserved throughout centuries and its secret recipe is forwarded generation after generation.
Nowadays, this product is almost exclusively produced at home by a few families knowing the recipe, in a very limited area of 30km around its native town.
Yubeshi is getting better and better as time goes, the older it is, the more complex are becoming its aromas.

Our perfect combination : sliced thinly, eat as it is, with rice, sake or ochazuke (bowl of rice immersed in green tea), on steamed egg or other warm dishes (by adding heat, the fl avor gets stronger.), cut in small dice and add to your pastas, rice or salads.
Sliced thinly, married with foie gras, with cheese (goat or ewe cheeses, blue cheeses), with fresh fruits and shiso…
In chocolate universe, it will enhance praline and stuff wonderfully chocolates…
