Seasoned or marinated vegetables are very popular in Japan. All Japanese housewives make raw marinated vegetables every week - cucumbers, aubergines, carrots, tomatoes, cauliflowers etc.

The main ingredient here is the second best rice vinegar in the world, made from rice cultivated at a high altitude, at least 500 metres above sea level, at the top of the mountains overlooking Miyazu. The crops are terraced (tanada) and don’t use any pesticides. 200g rice is used to make one litre of vinegar - 2 to 5 times more than all the other vinegars on the market.

The dried tomatoes in this pickle condiment give it roundness and umami.
​​​​​​​You can even use this condiment to season green salads or crudités.

For 100g of raw vegetables, add 5 tablespoons of the pickle condiment, put everything in a zip-lock bag that you close after having squeezed out the air, then place in the refrigerator for 3 hours.

The vegetables will be both crunchy and aromatic.

There are no additives, nor preservatives, just very high quality raw materials.
