Genmai Fuji black rice vinegar from Liojyozo is only made from genmai (brown rice) and fresh underground water. It is created by static fermentation, the traditional vinegar brewing method, followed by a long ageing period. Each 100ml vinegar contains up to 1000mg natural amino acids which are vital for a healthy body. .  It also contains amino acids which aren't able to be made by our bodies, which gives makes it one of the most appealing genmai black rice vinegars currently on the market.   What is more, you do not have to worry about pesticides which are sometimes found in the bud of the rice embryo because our vinegar is made from rice completely free from pesticides.  

You can drink it daily for health reasons, in which case we recommend diluting it in 7 units of water. 

Our recipe for trying this vinegar: Pork sparerib stew with black vinegar

Ingredients for 2

600g pork spareribs with bones

3 leeks

1 piece of ginger

2 tbsp olive oil

 

Ingredients for the stock

5cl Fuji genmai black rice vinegar

5cl soy sauce

2 tbsb brown sugar

Water (enough to cover the ingredients in the pan)


① Cut the leeks down to approx. 7cm then slice the ginger (3mm slices)

② Heat the olive oil in a deep pan and fry the ginger.

③ Put the spareribs in the pan and cook until coloured.

④ Add all the stock ingredients, cook with the leeks. Pour water over the ingredients until covered.

 

⑤ Leave to simmer for about an hour until the meat becomes soft. Remove the ginger and serve.
