Asanuma Shoyuten, based in Morioka (Iwate), a city surrounded by mountains and the region's famous pure waters, has been famous for the high quality of its soya and miso sauces for over a century. Since the Second World War, the food habits of the Japanese have changed and the food industry has diversified. Our artisan has adapted by developing various seasonings such as "tsuyu" (a condiment for somen and soba) and "tare" (a sauce for meat and vegetables), still using the brewing technology and know-how cultivated over many decades.

Asanuma Shoyuten's artisanal abalone sauce is a rare product favoured by the best restaurants in the Iwate Prefecture.

The Sanriku coast (north-eastern Japan) has the highest yields of abalone in Japan and is famous for its rich algae such as kelp (kombu), the favourite food of the abalone.

Awabi abalone sauce is prepared by putting fresh abalone liver in soy sauce, which continues to ferment and age according to a secret brewing technique.

This abalone sauce is a luxurious umami seasoning that has retained the smells of the sea. You will notice some subtle liquorice notes.

We recommend it with sashimi, delicate vegetable stir-fries, scallop carpaccios and other shellfish or crustaceans, wonderful meat or fish carpaccios, and some hard cheeses.
