The taste of the oyster is very present, enhanced by natural iodine and liquorice touches (due to their richness in natural glutamic acid). The Ishiwata Shoten craftsmen have created a vinaigrette sauce like no other using this mollusc. It works well on scallop or shellfish salads, small pan-fried cuttlefish, duck breast salad (duck with oysters was very popular over the last two centuries), meat or fish tartares, white fish ceviche, exotic meat, shrimp or other crustacean salads, delicately embellished with mango, pineapple and pear.
