It is also made up of selected malt and grain. The wheat and soybeans are grown by farmers working to reintroduce wild storks to Tajima. The storks love this specific wheat and soya.

This full-bodied sauce is used in small quantities and has an extremely rich umami flavour, highlighting the two flavours of the inosinic acid from the firefly squid and the glutamic acid from the soya.

Hotaruika Gyosho firefly squid soy sauce is exceptional with sushi and sashimi, brings out the flavour of fish or meat tartares and carpaccios, fried vegetables or shellfish, wok dishes or paellas.
