This full-bodied sauce is used in small quantities and has an extremely rich umami flavour, highlighting the two flavours of the inosinic acid from the fish and the glutamic acid from the soya.

Tobiuo Gyosho flying fish soy sauce is exceptional with sushi and sashimi, brings out the flavour of fish or meat tartares and carpaccios, fried vegetables or shellfish, wok dishes or paellas.
