Akiyama San, the IIO JYOZO cellar master, has created an exceptional vinegar made exclusively from fresh figs grown in Kyoto Prefecture (the other ingredients are natural kobo yeast and aceto bacter bacterium.

Eight months minimum fermentation are required to make this pure nectar. Production is extremely limited, and this vinegar is only suitable for purists and connoisseurs.
With a beautiful amber color, this vinegar has powerful notes of fresh ripe figs, a beautiful natural sweetness, with wonderfully complex acidic notes and a flavor reminiscent of vine leaves.

Our perfect combination : This vinegar will be good for seasoning poultry offal salads (liver, heart, gizzards, foie gras) and veal liver, veal or pork chops (deglazing and lacquering at the end of cooking), seared fruit such as apples, pears or strawberries.
