It is made from green ume plums and ripened ume plums (the plums are rich in organic acids such as citric acid), steeped in aromatic ingredients (fennel, aniseed and chamomile).
To achieve a rich and sugary flavor, the manufacturer uses natural sweeteners, such as agave syrup (renowned for its low glycaemic index), black sugar and Hiruzen honey.
This type of umeshu is characterised by its strong amber color and its brightness. The fruity notes taste of ume plum and ripened apricot, with refreshing notes of aromatic herbs. It has a gentle aftertaste with balanced sweetness and delicate acidity.

Our perfect combination : we recommend drinking at 8-10°C, on its own or on ice as an aperitif or as an after-dinner liqueur.  During a meal umeshu can accompany marinated fish or even dishes with strong salty flavors. It can also be enjoyed as a long drink by adding fresh still or sparkling water, as part of a meal.
