The quality of the water used for kneading is very important. Spring water, in this case, is drawn from deep in the vicinity of the workshop, located in Shizuoka Prefecture, near Mount Fuji.
We have selected these udon also for their excellent texture that remains perfect even several hours after cooking. 

Our perfect combination : for a cold consumption, dive into boiling water for 4 minutes at 4 minutes 30 depending on the desired texture. At the end of cooking, drain with the strainer and rinse with cold water. By using ice water, your udon will be softer.
For a hot consumption, plunge in boiling water for 3 minutes to 3 minutes 30 depending on the desired texture. At the end of the cooking, drain with the strainer and enjoy immediately by plunging your mouthfuls of udon in a light tsuyu sauce (with dried bonito or nature).
